Tea Time – Winter Edition 2017

The holidays have come and gone, but I’m still enjoying the holiday teas that are currently in rotation.  I also have a new favorite tea that I received as a gift for the holidays – Argo Earl Grey Creme.  Not as strong as your traditional earl gray tea, with a hint of creme flavor that really balances the tea.  Perfect for an afternoon curled up with a good book!  (and it should be noted that I drank an entire pot of tea one evening while reading over the holidays!)  😀 I’ve underlined the teas that are currently in rotation.

Back in the Kitchen

In my effort to cook more often and have more whole foods rather that processed convenience foods, I am going to dust off my cookbooks and attempt to try two new recipes a month.  I’ve written about my love of cookbooks in the past, but I tend to stick to my tried and true recipes.  I would like to try some new soup and chili recipes this fall and also make use of my crock pot more often in the fall and winter months.

Easy Egg Muffins

In my effort to simply a few things for the month of September, I made some egg muffins that will be a quick and easy breakfast during the work week, along with some toast and fruit or yogurt.  I made a batch in a mini muffin pan – a little egg goes a long way!

Egg MuffinsEasy Egg Muffins

4 eggs, whisked1/2 tbsp water
generous amount of salt and pepper (I liked my eggs seasoned well!)
ingredients of your choice – I sauteed some kale and shallot in olive oil and also added a handful of shredded cheddar cheese

Other combinations I would like to try include broccoli and cheese or spinach, mushroom and swiss. This would also be a great way to use leftover roasted veggies!

Pour egg mixture into a 12 count mini-muffin tin and cook for 15 minutes in a 375 degree oven.  Enjoy!

Juice, Juice and More Juice

Hello!  I wanted to check in and provide a quick update on my “eating clean in 2014” efforts.  To be perfectly honest, I haven’t been doing a very good job.  Still too much eating out or picking something up on the way home after a crazy day at work. As much as I try to do some meal planning, there are often discussions like “do you really feel like soup tonight?”, with a response of “I’m not sure… didn’t eat much at lunch today”, or “I ended up having soup for lunch”.  Does this sound familiar to anyone else?

One thing I have kept with?  Juicing!  I am still in the honeymoon phase with my juicer.  While it has been tougher to be organized and juice in the morning on work days, I have been juicing every weekend along with some weekday mornings or evenings.

Here are a few favorite combos:

For a “green” juice:  romaine, celery, spinach, cucumber, ginger, lemon, carrot and an apple

For a “greener” juice:  all of the above, plus some broccoli stalks.  If I have pear on hand, I will substitute the apple for a pear.
For something on the sweet side:  pineapple (great way to use the cores from a whole pineapple!), orange, pear and romaine. The romaine has a much lighter flavor when combined with the fruits – this is a great combo for introducing someone to juices.

In the winter months, I enjoy drinking more black teas, but I still try to drink some green and herbal tea as well.  A recently newly acquired tea is Trader Joe’s Harvest Blend Herbal Tea which is a great combination of great spices and flavors for the season. Spring Smoothies

In an effort to incorporate more fruits and veggies into my diet, I’ve started to get into the habit of making smoothies.  I love how quick and easy it is to throw in whatever fruit you have on hand (fresh or frozen).  It is also a great way to make use of some fruit on its last few days.  I generally start with a base of unsweetened vanilla almond milk or vanilla soymilk and a splash of orange mango juice.  Then I start tossing in the fruits and veggies.

If I am in the mood for something on the sweet side, I’ll use some banana, frozen mango, frozen pineapple and some strawberries.  Another option includes banana, raspberries and blueberries.  If I am in the mood for some greens, I’ll include some organic spinach or kale with my fruit mix.  I also add some ground flaxseed or stir in some chia seeds after the mixture is blended.

With the weather and temperatures warming up, I think I will be making good use of my blender this spring and summer.  Enjoy!

A Week of Superfoods

As promised, here is a recap of a week of incorporating more superfoods into my meals.  You’ll see a few repeats in here, as I made my Cranberry Orange Quinoa Salad and brought it to work for a few lunches.

Monday:  Yogurt with blueberries, quinoa, apple, green tea
Tuesday:  Yogurt with blueberries, green tea, quinoa, almonds, beans
Wednesday:  Quinoa, almonds, green tea
Thursday:  Almonds, green tea
Friday:  Yogurt, green tea, broccoli
Saturday:  Blueberries, raspberries, spinach, almonds
Sunday:  Blueberries, raspberries, spinach, beans

SmoothieOver the weekend, I made a smoothie with blueberries, raspberries, mango, pineapple, banana, spinach, kale, flax seed and almond milk.  This was an easy way to get in my fruits and veggies and also my superfoods!  I hope to add some more variety in the coming week (more broccoli/cruciferous veggies and beans).

Superfoods

As part of kicking off a fresh start with April, in addition to focusing on adding more fruits and veggies to my meals, I am also going to focus on “superfoods” for the month of April (many of which are fruits and veggies).  After reading up on what different MDs, RDs and nutritionists define as “superfoods”, I’ve included a list below as a starting point.  I would like to eat at least two superfoods every day.

  • Blueberries (and other berries such as raspberries or blackberries)
  • Broccoli
  • Sweet potatoes
  • Almonds and walnuts
  • Apples
  • Beans and lentils
  • Quinoa
  • Spinach
  • Avocados
  • Yogurt
  • Salmon
  • Green tea
  • Oats
