Veg Week

After a weekend of eating out and indulging in some wonderful food, I am going to try to focus on eating plant-based meals this week.  It is the perfect time to eat the different soups I like to make as the weather gets colder (butternut squash soup, lentil, minestrone).  I will try to keep myself honest as it relates to my eats this week, but I think a week of veggie-focused meals is just what the doctor ordered.
