Salmon and Sprouts

I just finished a nice and easy Sunday meal of grilled salmon, rice and roasted Brussels sprouts. It was easy to make, and even easier to clean up since the salmon was grilled on  foil.  For those who say they don’t like salmon because it has a stronger, “fishier” flavor, give this a try!

1 lb of salmon
3-4 green onions, finely chopped
3-4 garlic cloves of garlic, finely chopped
Soy sauce, (close to 1/4 cup)
Honey, 1-2 tsp

Combine the soy sauce and honey and set aside.  Place salmon on aluminum foil (I use the heavy duty kind and double up so that it will hold the salmon).  Pinch the corners and create an edge around the foil approximately 1-2 inches high.  Cut slits in the salmon and press the onion and garlic mixture into the salmon.  Drizzle the soy sauce mixture over the salmon, using a spoon to redistribute the soy sauce that runs off the salmon.  Let the salmon absorb the marinade for 15-30 minutes, occasionally redistributing the soy sauce.  Place the salmon on the grill and cook until it flakes with a fork.

Serve with roasted Brussels sprouts (olive oil, kosher salt, and pepper) and jasmine rice.

My apologies for the “plating” of the salmon – it was served it directly from the foil for easy clean up.
