I refer to “graked” as the combination of grilled and baked. This is a quick and easy side dish. I start by peeling and cubing two sweet potatoes into large cubes. To save some cooking time on the grill (or in a grill pan), I pop the sweet potatoes in the microwave for 3 minutes until they are slightly tender Let the potatoes cool slightly, and then toss with olive oil, salt, pepper and some pumpkin pie spice. The pumpkin pie spice provides a nice flavor to the sweet potatoes. Place the potatoes on aluminum foil and place on the grill. Cover and grill over low to medium heat, turning occasionally, for 15 to 20 minutes until slightly browned.
