A veggie sandwich is a nice alternative and break from my typical turkey sandwich. I make this one robust with flavor by marinating and grilling the veggies. The toasted bagel, grilled veggies and melted cheese is the perfect combination.
1 zucchini, cut lengthwise in thin slices
½ red onion, thinly sliced
1 cup mushrooms, thinly sliced
Quick veggie marinade (see recipe below)
Kosher salt and ground black pepper to taste
2 slices of cheese (swiss, pepperjack, and cheddar all work well. I have also used crumbled goat cheese)
2 sliced and toasted bagels (I prefer everything, onion, or sesame bagels)
Optional: sliced roasted red peppers (jarred works fine)
Quick Veggie Marinade
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/2 tsp Italian seasoning
Toss the sliced veggies in the marinade. Heat a grill pan over medium to high heat and cook veggies, turning after 5 to 7 minutes.
Toast bagels, top with grilled veggies, slice of cheese, and more grilled veggies. The cheese will melt from the heat of the veggies. For an extra kick, spread some pesto the bagel.
