Quick cuke salad – now try saying that three times fast! This is a good way to use a bumper crop of cucumbers from the garden or farmer’s market in the summer months. It makes a refreshing side dish to burgers or sandwiches.
1 medium cucumber, peeled
2 tbsp red onion, finely chopped
2 tbsp red wine vinegar
1/8 tsp kosher salt
Freshly ground black pepper
Splash of extra virgin olive oil
Cut the cucumber in half, lengthwise and use a spoon to remove the seeds. Slice the cucumber into thin slices. Combine all ingredients and let it hang out together in a bowl for a half hour, occasionally tossing the mixture. Enjoy!
