Dutch Oven Pancake

Growing up, my mom would make Dutch Oven Pancakes for breakfast as a weekend treat.  Part of the fun is watching the pancake “grow” in the oven as it cooks.  When you cut it, it almost looks like a breakfast pizza that could be topped with a variety of items including powdered sugar, fresh fruit, or even summer berry compote. It is a simple, but tasty, weekend breakfast.

 

 

 

 

 

 

3 eggs
½ cup flour
½ tsp salt
½ cup milk
2 tbsp melted butter
Dash of nutmeg

Preheat the oven to 425 degrees. Beat eggs with a whisk. Add milk, flour, salt, nutmeg and 1 tbsp melted butter and mix well.  Lightly spray a 9-inch glass pie pan with non-stick cooking spray. Place 1 tbsp butter into the pie pan and pop it in the oven until the butter melts.  Swirl the melted butter around to coat the pie pan. Pour the batter into the pie pan and bake for 20 minutes. Sprinkle with powered sugar and a splash of lemon juice, if desired.
