Summer Berry Compote

Here is a quick fruit compote, really almost a “jam”, just in time for the spring and summer months. This is often my “go to” for a light dessert and it can be prepared in less than 20 minutes.  It is a great way to get your vitamins and antioxidants from all of the berries.

1 12 oz bag of frozen berries (I prefer using a bag of mixed berries which includes raspberries, strawberries, blueberries, and blackberries)
2 tbsp sugar
1/2 tsp lemon zest

Combine ingredients in a small saucepan.  Heat over low to medium heat until mixture is bubbling and continue to cook for 15 minutes.  Remove from heat and let cool, if desired.

Serve over a slice of fresh pound cake or angel food cake (fresh whipped cream also recommended).   This also makes a fun topping for plain yogurt to create your own “fruit on the bottom” yogurt or as a topping for oatmeal.
